5 minutes easy to make Egyptian Egg Salad recipe

This ain’t no ordinary salad, it’s an eggs-cellent salad, which blends perfectly together with fava beans, egg, and the rich flavors of cumin, garlic, lemon, and tahini.

  • 1 lemon,  juiced
  • 1 tbsp tahini
  • 1 tbsp rapeseed or canola oil
  • 1 red onion, chopped
  • 3 large garlic cloves, finely chopped
  • 1 tsp ground cumin
  • ½ tsp cumin seeds
  • 400g can borlotti or fava beans, juice reserved
  • 2 little gem lettuce cut into wedges
  • 2 tomatoes cut into wedges

Recipe Info (Egyptian Egg Salad)

Method of preparation

  • Boil the eggs in a pan full of water for 8 minutes. Drain the boiling water and cool them down using tap water, after that peal their shell off and cut them into halves. In the meantime, mix 1 tbsp lemon juice with 3 tbsp water and tahini to make a dressing.
  • Shallow fry onion and garlic for 5 mins to soften them. Add 1tbsp ground cumin and ½ tbsp cumin seeds, stir briefly, add the beans and lightly (mash some of them as you heat them), add some of the juice from the can, it’ll give you a nice creamy consistency but keep the whole beans, too. Taste and add lemon juice and seasoning according to your taste.
  • Put some lettuce in a plate and spoon the beans on it, after this add the eggs and tomatoes, with the tahini dressing, chilli and parsley (if using).
