High fat chicken thigh -keto chicken salad recipe

Recipe Info (chicken salad with feta cheese)

Method of preparation

  • Take a bowl and put your chicken pieces in it. It is recommended to use thigh and leg piece with skin, as it contains high amount of fat, essential if you are on a keto-diet.
  • Season the chicken with salt and freshly grounded black pepper. Add some mixed herbs, 1/2 tbsp of apple cider vinegar and 1/2 tbsp of olive oil to your chicken bowl. Mix them thoroughly.
  • Heat up 1/2 tbsp of Beacon fat in your pan. Once the pan is hot, put your seasoned chicken pieces in the pan and cook it for 2-3 minutes until golden brown. Flip the pieces over and repeat the process.
  • Add 1 tbsp of butter in your pan and let it melt. Flip your pieces and let it cook for another 2-3 minutes.
  • Take out all the chicken pieces in a plate and extract all the leftover juice in a bowl. Keep this extracted juice handy, as we will be needing it in our dressing.
  • Now you need to prepare your vegetables. Slice some tomatoes, cucumber, and green olives. Don’t mix them. Chop some romaine lettuce and keep it aside for arrangement.

For the dressing

Take a bowl and follow the process below.

  • Add 1 tbsp of fatty Greek yogurt.
  • Add 2 tbsp of olive oil.
  • Squeeze in 1 tea spoon of lime or lemon juice.
  • Add 1 tbsp of the extracted juice.
  • Season it with salt, black pepper and cayenne pepper.
  • Add some freshly chopped parsley and give it a good mix.


Take a bowl and follow the process below.

  • Place the chopped lettuce in your bowl to form a bed.
  • Arrange the tomatoes, cucumber and olives on top of it.
  • Crumble around 50 grams of Feta cheese on it.
  • Chop some cooked chicken pieces and add it to the salad.
  • Pour the salad dressing using a spoon
  • Your chicken salad with feta cheese is ready to serve!
