Ingredients for Tomatillo Salsa Verde

  • 6 medium tomatillos
  • 1/4 medium yellow onion, cut into large chunks
  • 1 serrano or jalapeño pepper, stemmed* (see note)
  • 2 garlic cloves, unpeeled, wrapped in foil
  • 1/2 tablespoons extra-virgin olive oil
  • 1/2 tablespoons fresh lemon juice
  • ¼ cup chopped cilantro
  • 1/2 to 3/4 teaspoon sea salt to taste

Instructions to make Tomatillo Salsa Verde

  • Preheat the oven to 450/ 232 °F/°C and layer a baking sheet with Parchment Paper or a Silpat.
  • Peel off the husks from the tomatillos and wash with cool water so that there is no stickiness. 
  • Place the tomatillos, onion and pepper on the baking sheet and sprinkle olive oil. Season it with a generous pinch of salt. 
  • Place the wrapped garlic on the pan and roast it for 15 minutes, until the tomatillos get softened.
  • Unwrap the garlic from the foil and peel it. Now place it in the bowl of a food processor and add the roasted vegetables along with lime juice and cilantro and pulse. 
  • If your salsa is too thick, add 1 to 2 tablespoons of water to thin to desired consistency. Season to taste.

Tip for Tomatillo Salsa Verde

  • People who are sensitive to spice shall start by adding only half of the pepper. If you find it less spicy then add more according to your taste. 
  • If your tomatillo salsa verde is too spicy, you can turn down the heat by adding a few drops of white wine vinegar according to your taste.

  • Microgreens, optional
  • Sliced serrano peppers, optional

  • Grease a medium-sized nonstick stick skillet using olive oil and bring it to medium heat. 
  • Add the spinach and season it pinches of salt and pepper according to your taste. Sauté it well until the spinach is wilted. If there is not enough space for all the spinach to fit in well, prefer working in batches.
  • Wipe out the skillet to get it ready for scrambled eggs. 
  • Skim the skillet lightly with olive oil and bring to medium heat. 
  • Add the eggs and let them cook for a few seconds. After that stir and scramble the eggs until they set.
  • Prepare the tacos with the eggs, spinach, avocado slices, and scoops of tomatillo salsa verde. 
  • Garnish it with the microgreens and sliced servants. Serve with lime wedges.

Tips

  • Fresh tomatillo salsa verde can last up to 2 weeks or more if jarred.
  • You can also add black beans, diced tomato, or dried chile salsa if you want to.
  • You can refrigerate the tortillas for a week. They can even last longer than a week if frozen.
