Ingredients 

  • 1 fresh bread (mutli-grain or whole wheat)
  • 1 fresh egg
  • 2 ripe Avocados
  • 1/8 tsp salt or to taste 
  • 1 tsp freshly squeezed lemon juice
  • Black pepper to taste optional
  • Extra Virgin Olive Oil to drizzle over the top
  • 1 tbsp Apple cider vinegar for poached egg

How to poach an egg

To make this Avocado toast with poached egg recipe, let’s first start with making our poached egg. Making a perfect poached egg at home is not a big deal. You might not be able to get right in a single go but if you follow the trick mentioned in this article you will be able to master it easily in no time. 

What we’re looking for is a smooth and gentle outer covering of egg white that envelops a soft yolk inside. It is very important to keep in mind that the yolk is not fully cooked and should come out as liquid when the poached egg is punctured. 

For a perfect elliptical shaped poached egg we need – water, deep frying pan (large in size), a spoon, a fine meshed sieve and 1 tbsp of Apple cider vinegar. You can use normal vinegar too in case you don’t have apple cider vinegar.

How to make  a poached egg - stale egg vs fresh egg

Make sure your eggs are fresh as fresh eggs have thicker egg white to hold the yolk inside easily with a good round shape when cooked. To check the freshness of an egg, simply take a glass of water and place the egg inside. If the egg sinks and sits horizontally touching the glass bottom, then it’s fresh. Older or stale eggs will float or will stand on one end. 

  • Fill your pan with tap water upto 3-4 inches deep. 
  • Take an egg and crack it into a fine mesh sieve. Give it a gentle swirl and let it rest for 20 seconds. This will remove all the loose and liquidy egg white leaving you with the yolk surrounded by thicker white. Do remember to keep a cup or a bowl underneath your fine mesh sieve or it will be a mess.
  • Transfer your extracted egg into a cup or a small bowl. 
  • Start heating the water in your pan till it’s about to boil. You will notice small bubbles in the bottom but ensure no bubbles are breaking the surface. Don’t add salt as this changes the density of water and might break the egg white. 
  • Once your water is ready add 1 tbsp of apple cider vinegar and lower the flame.
  • Now comes the trick part, make a good fast vortex in that water using a spoon. Use a table spoon for this, bigger spoons will not be helpful and might spill the water.
  • Now gently drop the extracted egg in this vortex and let the magic happen! Wait for around 2-3 minutes till the egg white cooks and sticks around the yolk.
  • Once done take out the poached egg using a slotted spoon and remove the excess water using a paper towel.
  • Trim the straggling white bits if any and your poached egg is ready to serve.

How to make the avocado spread

Now with our poached egg ready, we need to make the spread for our avocado toast with poached egg recipe.

  • Take two ripe avocados in a medium bowl and remove the seeds. 
  • Take a potato masher and start mashing the avocados.
  • Add ⅛ tsp of salt and 1 tsp lemon juice(fresh) to your mashed avocados. You may adjust the salt according to your taste. 
  • Mix them well and your spread is ready.

How to make a toast 

Moving on to the third step to make our avocado toast with poached egg, let’s make our delicious and crunchy toast.

  • Take a frying pan and a slice of bread.
  • Heat the pan and add ½ tsp butter. Spread the butter evenly.
  • Once your pan is ready place the bread slice and toast it till light brown. 
  • Flip it and repeat the process.
  • Take out your toasted bread on a plate. Keep the corners or remove them using a knife; it’s your choice.

Final step, with everything ready let’s now assemble our avocado toast with poached egg and dig in!

  • Add your avocado spread gently on the toasted bread. 
  • Drizzle some extra virgin olive oil and crushed black pepper
